Warm Tabouli Salad with Mint Dressing
This classic Mediterranean whole grain side dish is a perfect complement to grilled fish or roasted chicken. For a vegan option, add some chickpeas and toasted, chopped walnuts.
3 cups water
1/2 teaspoon salt
1 1/2 cups bulgur
2 tablspoons extra virgin olive oil
1/4 cup fresh lemon juice
1 tablespoon low-sodium soy sauce
1/4 cup chopped mint leaves
1 handful of parsley, chopped
3 scallions, sliced
1 pint cherry tomatoes, sliced
1. In a small saucepan, boil the water with the salt. Add the bulgur, turn off the heat and cover the pan. Let sit for 15 minutes.
2. In a small mixing bowl whisk together the olive oil, lemon juice and soy sauce. Add the mint and set aside.
3. In another mixing bowl combine the cooked bulgur, parsley, scallions and tomatoes. Pour the dressing over the bulgur and gently toss together. Serve warm.
