Are you wondering what to make for dinner tonight? After all, it is mid-week, and although no one is in school and schedules are a little off kilter, you still need to get food on the table. And hopefully make it healthy.

I’ve got your back. I know first hand how summer can turn a good routine into chaos. And although we want a little more free and easy, we don’t want to totally blow it. Here are three quick, healthy dinner ideas that only require a quick pop in to the grocery store, a little bit of prep and a quick light of the grill. Dinner done.

It’s all coming from my garden

Chili Rubbed Salmon and Grilled Squash with Basil Pesto. Do you have a garden? How about a farmer’s market? Okay, get to the grocery store and pick up a couple yellow squash, and a large bunch of basil, then hit the fish store for a fresh piece of salmon. Light the grill, rub the salmon with a sprinkle of salt, pepper, chili powder and cumin. Slice the squash and do the same. Place the salmon and squash on the grill, about five minutes on each side, until done. While both are cooking make a quick pesto with that bunch of basil, some grated parmesan, extra virgin olive oil, and some walnuts, if you have them, salt and pepper. Adjust the measurements as you like. Serve over the fish and veggies.

Tomato and Spinach Frittata with Arugula Salad. Have extra eggs in the house? Make this super easy “breakfast for dinner”. Heat your oven to 350. In a large bowl scramble together 8 eggs, a splash of milk or yogurt, some salt and pepper and whatever dried herbs you have on hand (oregano and thyme are good options). Slice up a pint of cherry tomatoes, and a small red onion. In a large, oven proof saute pan, heat some olive oil add the red onion and cook for about 3 minutes. Add in the tomatoes and cook for another minute, then a handful of baby spinach.  When the spinach is wilted turn off the heat and add the egg mixture. If you have some feta or parmesan, sprinkle a little on top if you’d like. Place the pan in the oven and cook for about 10 minutes, until the eggs are set. Serve with the salad.

Black Bean and Goat Cheese Quesadillas. Light your grill to medium heat. Drain and rinse a large can of black beans. Chop up a medium yellow onion and saute in some olive oil, with a sprinkle of salt and pepper, for about five minutes. Turn off the heat, add in the beans with a teaspoon each of chili powder and cumin and lightly mash. Chop up some fresh cilantro, or other fresh herbs and add to the mix. On whole wheat tortillas, add the mixture with a sprinkle of goat cheese. Top with another tortilla. Carefully place on the grill and heat for about a minute, then flip. When the cheese is soft and warm, quesadillas are done.

There you have it, done and done. Three quick healthy dinner ideas for those summer weekdays when you are too hot to do much more but still want something you can call healthy.
