Smoothies are a fantastic way to get a lot of nutrition in a glass. There are other benefits too. You can make double and bring it along with you to work. You can also feel good knowing you are having one of the healthiest snacks out there.
But what happens when the air turns cold and the last thing on your mind is raw spinach and mango (or maybe you live in Australia. Then click HERE for that smoothie)?
In walks the pumpkin smoothie, my winter equivalent of the summer green smoothie. Once winter hits, my attention turns to warm, slower cooked food (click HERE for my take on winter) and vegetable bean soups replace most of the raw vegetables I eat in the summer. I still do like quick and easy though, and here is where this smoothie fits the bill: it uses top notch nutritous ingredients more suited for colder months but blends up in a flash. Spiced Pumpkin Smoothie
1 cup almond milk (make you own! Click HERE for the my recipe)
1/2 cup canned pumpkin
1 medium banana (freeze it if you like to make the smoothie even thicker)
1 tablespoon maple syrup, more to taste
1/2 teaspoon vanilla
1/4 teaspoon cinammon
pinch each of nutmeg and cloves
1/2 cup ice
1. Place all ingredients in a Vitamix or blender, starting with the liquid first. Blend until smooth and enjoy!
