Spiced Toasted Pumpkin SeedsPrint
Pumpkin seeds are full of beneficial fats. The addition of spices adds antiinflammatory properties and lots of flavors.
1 cup shelled pumpkin seeds
1/2 teaspoon chili powder
salt and pepper to taste
2 teaspoons extra virgin olive oil
Preheat the oven to 350 degrees F. Place pumpkin seeds on a small baking sheet and toss with chili powder, salt, pepper, and olive oil. Bake for 5-7 minutes, until seeds are fragrant and toasted.
Use these seeds to garnish Curried Butternut Squash and Apple Soup, stir into oatmeal or add a kick to salads.
