Roasted Asparagus with Lemon Herb Vinaigrette
A perfect side dish for spring! Seasonal asparagus and fresh herbs make this delicious with grilled tofu, fish or chicken.
2 tablespoons fresh lemon juice
1 teaspoon grated lemon zest
1 small shallot, minced
5 tablespoons extra virgin olive oil
1 tablespoon fresh tarragon, minced
salt and pepper, to taste
2 pounds asparagus, trimmed
1 lemon, sliced thin
1. Preheat the oven to 400 degrees F. In a small mixing bowl, combine the lemon juice, zest, and shallot. Incorporate the oil, blending together. Add a dash of salt and pepper to taste and set aside.
2. Place the asparagus in a single layer on one to two baking sheets. Add a sprinkle of salt and pepper and a drizzle of olive oil and toss to combine. Place the lemon slices on the asparagus. Roast in the oven for 10 minutes or until the asparagus is slightly charred and soft.
3. Place the asparagus in a serving dish and spoon over the vinaigrette. Serve immediately.
