Lemon Balsamic Vinaigrette
This is a basic, versatile salad dressing that can stand in for a marinade or even a dip. Make this dressing at the beginning of the week to have on hand for a variety of meals.
Makes about 1 cup
4 tablespoons balsamic vinegar
4 tablespoons fresh lemon juice
1/2 cup extra virgin olive oil
1 teaspoon salt
1 teaspoon pepper
1. In a blender or Vitamix blend the vinegar, lemon juice, olive oil, salt and pepper until well incorporated.
