Coconut Almond Granola Bars
These granola bars are easy to double, simply freeze the rest. Bonus: crumble them up for delicious granola!
2 cups old fashioned oats
1 cup unsweetened coconut
1 cup almonds, chopped or slivered
2 tablespoons coconut oil
1/2 cup honey, preferably local
1/2 cup almond butter
1/4 teaspoon salt
2 teaspoons vanilla
1 cup dates, chopped (buy them already chopped)
1. Preheat oven to 325 degrees F. Place oats, coconut and chopped almonds on a baking sheet, tossing together. Bake in oven for 10 minutes, until slightly toasted and aromatic.
2. In a medium saucepan, whisk together the coconut oil and honey. Gently heat over medium low heat until combined. Add the almond butter, salt and vanilla. Continue, stirring occasionally, until well combined, about 5 minutes. Remove from heat.
3. Turn oven down to 300 degrees F. Place the oat mixture in a medium mixing bowl. Drizzle the honey mixture over the oats and add the dates. Combine well and place evenly in a well oiled 8×8 pan, patting down evenly with your fingers.
4. Bake for 25-30 minutes until slightly golden. Let cool in the pan for about an hour before cutting into bars with a sharp knife.
