Chocolate Coconut Drizzled Popcorn
I made my own popcorn, but if you are short on time, you could always buy air popped popcorn, low in salt and fat.
Makes about 8 cups
1/2 cup popcorn kernels
2 tablespoons virgin coconut oil
4 ounces dark chocolate, such as Ghirardelli
1/2 cup unsweetened flaked coconut
- Make the popcorn: In a large pot, melt the coconut oil over medium high heat. Add the kernels and be sure to cover. Wait to hear the popcorn starts popping and shake the pot to keep the kernels moving. Do not open the lid until all the kernels have popped!
- Place the popcorn in a large bowl and set aside. In a saucepan add a few inches of water and bring to a strong simmer. Place a small metal mixing bowl large enough to fit snug on top and add the chocolate. Stir frequently until fully melted, about 5 minutes.
- Drizzle the chocolate over the popcorn and sprinkle with the coconut and dash of salt. Toss well and eat!
