Buttermilk Ranch Dressing

Description

Rather than use traditional, less healthy ingredients in this dressing, I incorporate nutrient rich cashews in place of mayonnaise. Be sure to use a high powered blender, such as a Vitamix, to really pulverize the nuts.


Ingredients

1/2 cup cashews
2/3 cup buttermilk
1/4 cup apple cider vinegar
1/2 teaspoon coarse salt
1/4 teaspoon pepper


Instructions

1. In a small bowl place the cashews and cover with very hot water. Soak for 20 minutes to soften the nuts. Drain the water.

2. In a Vitamix or blender, add the cashews, buttermilk, vinegar, salt and pepper. Blend on high speed for 1 to 2 minutes, until the cashews are well pulverized and the dressing is smooth. Place in the refrigerator for 30 minutes to chill and meld flavors.
