As is my tradition, I am overrun with zucchini and yellow squash in my garden.


A lot goes to the grill – along with this local corn and onion I picked up at the farmer’s market. With my family’s crazy schedule, simply having a lot of components for “bowls” on hand (grilled veggies, brown rice, some grilled chicken), is a great way to throw together a quick lunch or dinner. Add in a  pesto, or a sauce and you’re done.


I have made breadsnoodles and summer ratatouille out of my summer squash. I love it for its versatility and great taste but I mostly love summer squash for its amazing health benefits.  Zucchini and yellow squash are full of fiber, vitamin C, minerals and phytonutrients. They really make the perfect summer vegetable.


Along with all the summer squash comes loads of these beautiful squash blossoms. I am going to try my hand tonight at Zucchini Blossoms Stuffed with Ricotta. Doesn’t that sound like a delicious appetizer?


Mostly, I love growing my vegetables to share with friends and family. There is nothing better than sharing something you have grown by hand.
