I’m thankful that I decided to work with you last winter. A lot of what we discussed and the ideas you gave me really took hold. I’m cooking more, and I have easily doubled our intake of vegetables on a weekly basis. I don’t throw away the kale any longer! I go through a bag or two each week. Chickpeas are on a weekly rotation, and I’ve ventured into quinoa and farro. Sometimes for breakfast. My energy, digestive system – even my skin tone – have all improved. All good and so illuminating. It’s not “perfect” (what is?) but I am certainly no longer “failing at food” and that feels great.

Most of us know what we should be eating and what we shouldn’t. But how to make that happen on a regular basis . . . for yourself plus others . . . and when up against the time pressures of modern life? It’s enough to make you want to throw in the towel. My last ditch effort was to consult with Heather Carey. Boy was I glad I took that chance. Pleasant surprises are rare, but Heather is one of them. The first surprise came when she patiently allowed me to talk until I finally came to a fairly clear articulation of the food/meal challenges that my family and I face. We deal with food allergies (deadly ones), food preferences, food battles, and time constraints. Like everyone else, we are complicated. “I was ready to get started with working with Heather, it’s been a long time coming! I can’t believe the amount of processed foods/sugar I was eating! It was scary. I was always afraid that cooking would be too much work to do and I didn’t have time but it is so worth it! I feel so much better after I eat and I now know exactly what is going into my food and body.
What’s important to know is that this is NOT a diet. This is a lifestyle and once you try it, you will never want to go back to the way you were eating before. I used to always want to lose that 20 pounds in two weeks. When I didn’t, I would get frustrated, give up and gain more weight! Heather taught me to take my time and go by my body and trust that I will lose weight as I am supposed to. This was something I found challenging (and still do sometimes) but I hear Heather’s voice telling me it’s ok and to take my time.
It has been so helpful to bounce questions and ideas off of Heather. Her recipes, healthy tips and genuine caring spirit have been a wonderful support to me. I need to be held accountable and she has been available for me to check in with at any time. That has been another major plus for me! Meeting with Heather to map out my plan, thoughts and realistic schedule helped me so much. She gave me the right amount of encouragement I needed without forcing me to try or do anything I didn’t want to.
I have learned a lot about foods that I always liked when I had them but was too afraid to cook with such as kale or curry dishes.. It has also opened me up to expanding my cooking and recipes. These were some of the changes I really needed. The constant support has been so wonderful and I feel lucky to have connected with Heather who helped me make some positive, healthy changes in my life.
Heather is a wealth of knowledge, filled with kindness, patience and her whole heart is in this. I had developed some really bad habits (Ring Dings anyone?) and had forgotten what food was all about. I cannot believe how easily I let things slip.
A big part of your program’s attraction for me was the desire to get back to cooking and the preparation of different delicious meals. I think I mentioned to you that if I had one more plate of grilled vegetables and a side of protein, I’d lose it. In a way, I did; I lost all interest in cooking because it just wasn’t fun anymore and there was too much focus on eliminating carbs (more protein! more vegetables!) or some new research that was making my head spin.
Is it possible that I am getting some sort of emotional satisfaction from making these meals and that feeling is ‘crowding out’ the negative aspect of emotional eating? I just don’t feel like having the cookies or treats at the end of the meal (or in the middle of the day or right before bed or because it’s raining or it’s Tuesday . . .) because the main meal has satisfied me on so many levels.
I can’t tell you how happy I did your program. I enjoy cooking again and that means so much to me. An added benefit of doing conscious meal planning and preparation is that by Saturday morning, my refrigerator is empty. I don’t have a lot of wasted left over food and it makes cleaning my refrigerator all that much easier. It’s a very efficient way to eat actually. Its recipes like these that I thoroughly enjoy eating and preparing.
